Closing Procedures

 

Please close the shop to the standard that you would wish to walk into as the opening shift. It is our job as the closing shift to set the opening shift up for as much success as possible. This is both honoring to our team mates and helps us to maintain our level of shop excellence.

These times are designed as guidelines to be able to help you walk out of the shop as close to closing as possible with a perfectly reset shop, there will be days when most of this gets done relatively quickly due to different rush patterns and other days where you won’t get to any of these tasks till closing time. Don’t worry if all the tasks don’t line up with the times exactly all the time, you will figure out your rhythm as you go.

Most importantly remember, everything must be finished before you leave for the evening.

  • Fill out stock list on app. If there’s an item that’s low or out that’s not on the Daily Stock list, add that as a note on the bottom of the form in the notes section.

Wipe Down

  • Face of the cupboards, drawers, and kitchen wall for splashes and spills
  • Inside doors and drawers for coffee spills

  • Inside fridge for spills
  • Dishwasher door–spray the inside edge of dishwasher door with Krud Cutter and wipe with cloth if dirty

Floors - Vacuum & Mop

Laundry

  • Bathroom towel laundry–leave clean, dry bathroom hand towels for the morning shift

Wipe & Clean

Empty and Clean

  • Press pots (review instructional video) 
  • Milk carafe, place in the kitchen fridge 

Pack Away

  • Honey, simple syrup, and chocolate in the milk fridge along with any seasonal syrups 
  • Display cakes in the freezer
  • All food items left out, toast toppings and cakes 

Wipe Down

  • Pastry display case and the glass dome
  • Tables
  • Grinders
  • Counters
  • Condiment Bar

Home Stretch

 
  • Close blinds 
  • Flip Close sign 
  • turn off Open sign
  • Vacuum and mop remaining floors (empty vacuum and throw dirty mop heads in laundry bucket)
  • Wipe down and take patio furniture inside (warm weather task) 
  • Empty previous clean load and load all the remaining dishes and start the dishwasher 
  • Clean the sink out 
  • Empty the milk and espresso grossers under the bar
  • Final wipe down of the kitchen counters
  • Hang very damp rags over the rag bin to dry out overnight
  • Set out clean towels for the morning, one of each color 
  • Make sure washed laundry is not left in the washer overnight but place in dryer and turn on

Espresso Bar–review instructional video on how to clean the machine 

  • remove and clean espresso mat, drip mat, espresso catcher, and grinder plate
  • wipe down bar counter
  • back flush machine (this is when we use the cleaner)
  • remove basket from porta-filter and scrub them both down 
  • scrub the screen and around the screen too 
  • wipe down and purge steam wand
  • wipe down and buff the machine
  • set out clean towels for the morning

Last But Not Least

  • Turn off any fans left on–swamp coolers, fresh air circulator, fan heaters
  • Cold weather–make sure thermostat is set to 80°F
  • Turn lights off 
  • Lock the back door 
  • Turn the music off 
  • iPad–set auto lock to 2 minutes
  • Set alarm to AWAY 
  • Lock the front door behind you 
  • Clock out on the Sling app
